Those who read my post about Friday date night saw these cookies. Now it is time to post the recipe. These are delicious, melt in your mouth kind of cookies. The recipe is really simple and I love the dough because it resembles play dough. If you wanna have some fun with kids in the kitchen the possibilities with this dough are endless: color it as you like, let your kids set their imagination free, and bake the sweet creations to show off and indulge!

MINT TOPS (from "Sju Sorters Kakor" Swedish Cookbook)(40 cookies)(for printable recipe click here)
Ingredients:
1 cup confectioners’ sugar
200 g butter, soft
1 cup starch
4 cups flour

Garnish:100 g semisweet chocolate
3-4 drops peppermint oil
1 oz. semi-sweet chocolate, optional1 oz. white chocolate, optional

Directions:
Preheat oven to 325*F.Mix sugar, butter, all-purpose flour, and starch to obtain smooth dough. First, when you start working the dough together, it will seem that it is too dry, but don't add anythnig, it will come together to a perfect working consistency. The dough will resemble play dough.
Roll dough into small balls and place them on a greased baking sheet or baking sheet covered with parchment paper. Make a small indentation in the middle of the cookie.Bake on the middle rack of the oven for about 10 minutes. Let the cookies cool down a bit.
 In the meantime, melt 100 g of semi-sweet chocolate over a water bath, drop in peppermint oil, and stir to combine. Fill the small indentations in the cookie with mint chocolate. Melt the rest of the semi-sweet chocolate and white chocolate and drizzle all over the cookies. Allow the chocolate to harden before indulging. I made some small s-shaped ones too!
